Theresa's Mom's Famous Thumbprints - A Family Favorite for over 50 years!

PREHEAT OVEN to 375 TOTAL BAKE TIME 10-12 mins

SIFT:

  • 3 Cups of Flour
  • 1/2 teaspoon of salt

CREAM:

  • 1 1⁄4 Cups of Butter – Gradually add
  • 1 Cup of Sugar
  • BLEND IN:
  • 2 eggs
  • 2 Tablespoons of Vanilla
  • Beat Well and Gradually Add Dry Ingredients

Form Into I” Balls (if dough is too soft refrigerate til firm)

Roll Balls into Beaten Egg Whites, then into chopped walnuts.

BAKE for 5 mins – Remove from oven and make indentation in the center and fill

with Strawberry Preserves.

Put back in the oven for an additional 5-7 mins.

Green Wonders (Spinach Balls)

INGREDIENTS (Makes around 75 balls)

  • 2 (10 oz frozen packages) Cooked, Drained Spinach
  • 2 Cups of dry Herbed Stuffing Mix
  • 2 Large Finely Chopped Onions
  • 5 Beaten Eggs
  • 3⁄4 Cup of Melted BuƩer
  • 1⁄2 Cup Parmesan Cheese
  • 1 Tbsp Garlic Salt
  • 1⁄4 Black Pepper
  • 1 1⁄2 tsp Thyme

Mix all ingredients in a bowl. Chill for 2 Hours. Shape into small balls and place on

a cookie sheet and freeze. When frozen remove from the cookie sheet and place

in a freezer container.

TO SERVE

Place balls on ungreased cookie sheet and bake at 350 degrees for 20-30 minutes

or until bottoms are golden brown.

Au Gratin Potatoes

INGREDIENTS

  • 1/2 lb Butter
  • 5 lb Potatoes
  • 1 - 1.5 lbs Velvetta Cheese
  • Paprika
  • 1/2 cup Flour
  • 5 cups Milk
  • Salt & Pepper

DIRECTIONS

  1. Boil 5 pounds of Potatoes with skin
  2. Melt 1/2 Pound of butter in Saucepan
  3. Add 1/2 cup of flour and stir until smooth - cook 1-2 minutes
  4. Add 1 TBSP of Salt and Papper
  5. Gradually add 5 cups of milk - stir constantly
  6. When hot - Add 1lb or 1.5 of Cubed Velvetta Cheese
  7. Butter Casserole Dish
  8. Add a Layer of Cheese Sauce to the bottom
  9. Layer Potatoes and Sauce
  10. Sprinkle with Paprika (Could Add Green Pepper)
  11. Bake for 40 - 45 minutes at 350 Degrees

Aunt Flossie's Pound Cake

INGREDIENTS (Makes 3 loaves - pan size approx. 10in x 4in)

  • 8 Eggs
  • 2 2/3 cups Sugar - Sift Sugar before measuring
  • 1 lb Margarine
  • 3 1/2 cups Plain Flour (Cake Flour) - Sift Flour once before measuring, then sift the 3 1/2 cups 3 times. 
  • 8 TBSP Carnation milk (Measure scant 1/2 cup)
  • 1/4 tsp Vanilla 
  • 3 - 4 Drops Almond (Add this to the carnation milk)

DIRECTIONS (Note: It is best to get everything measured and pans prepared before starting the cake)

  • Reserve 6 scant tablespoons (1/4 cup) sugar from the measured 2 2/3 cups
  • Separate Eggs
  • Cream sugar and butter until light and fluffy
  • Add egg yolks, blend thoroughly, then add 1/2 cup flour, 1/3 milk, and last 1 cup flour - well blended
  • Put aside (Cover bowl of cake batter with plate or cover)
  • Beat Eggs whites adding the 6 tbsp sugar, when stiff as meringue fold into cake batter, well blend into batter
  • Grease baking pans with Crisco and line bottom with wax paper, grease paper after placed in prepared pans and flour, shake loose flour on wax paper
  • Bake at 325 Degrees for 55 minutes

Lemon Meringue Pie

INGREDIENTS (Serves 6-8)

  • Baked 9 inch pie shell
  • 1 1/4 cups plus 6 tablespoons Sugar
  • 6 tablespoons Cornstarch
  • 1/8 Tsp Salt
  • 1 tsp Grated Lemon Rind
  • 1/4 cup Butter
  • 3 Eggs
  • 1/3 - 1/2 cup Lemon Juice

DIRECTIONS

  • Mix 1 1/4 cups sugar, the cornstarch and a pinch of salt together in a saucepan
  • Add 2 cups boiling water and the lemon rind
  • Cook over direct hear, stirring constantly until thickened - Continue cooking and stirring for about 20 minutes
  • Remove from heat and add butter
  • Pour the hot mixture gradually over the slightly beaten egg yolks which have been mixed with the lemon juice
  • Beat until very smooth
  • Return to heat and allow to become steaming hot again, stirring to prevent scorching
  • Fill the pie shell and bake in 400 degree oven for 5 minutes
  • Remove from oven and cover with a meringue made with the egg whites beaten stiff with Pinch of salt and the remaining sugar
  • Bake in 350 Degree oven for 10-12 minutes, until delicately browned.

Dirty Crackers

INGREDIENTS

  • 1 Tbsp Dill Weed
  • 1 Tbsp Parmesan Cheese
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Lemon Pepper
  • 1/4 Seasoned Salt
  • 3/4 Cup Oil
  • 1 Pkg Hidden Valley Ranch
  • Oyster Crackers

DIRECTIONS

  • Mix oil and spices
  • Add to 10 - 12 oz Oyster Crackers
  • Wait a few minutes and mix again
  • Repeat until all oil is absorbed
